Quick and Easy End of Summer Raspberry Fruit Salad
Did you know I used to write books and cookbooks?
This recipe was first published back in 2012 in my book Simple Things.
A light, delicious, and easy recipe--easy recipes are my mainstays!
Plus it's a great way to use up end-of-summer berries.
You can use any other berry or flavor of Jello you choose.
Raspberry Fruit Salad
1 (6 oz.) package raspberry Jell-O
1 ½ cups boiling water
1 (3 oz.) package cream cheese cut into cubes and softened
1 cup fresh raspberries, washed
1 banana, sliced
1 cup crushed pineapple, drained
1 cup mandarin orange slices, drained
½ cup pecans
1 cup whipped cream
Dissolve raspberry Jell-O in boiling water. Gradually add the cream cheese and blend until smooth. Chill until slightly thickened. Fold in raspberries, banana slices, pineapple, orange slices, and pecans. Beat whipped cream until stiff then add to Jell-O mixture. Chill until well set.
